Recipes of the past often gave measures in grams, ounces, pounds, and kilos–rather than in cups and quarts–and every serious cook needed a scale for those measurements. Julia's scale had sets of weights for European (grams and kilos) and American measurements (ounces, pounds) since she cooked in both systems.
