Learning to make stock is one of the most basic of cooking skills that every cook, professional or home, must learn, and the stockpot is an essential tool for serious cooks. Julia loved her huge French copper pans, though in later years she used restaurant steel stockpots and kept her rolling pins in her copper pot.
