Object 61 [of 66] – Caviar spoons

 

Mother-of-pearl spoons rest in small green velvet cases in one of Julia's utensil drawers. Caviar, prepared and salted sturgeon roe (fish eggs,) is best served with small spoons like this, made from mother-of-pearl, the shiny interior of an abalone shell. Caviar spoons aren't metal because the salts in the caviar interact with typical spoon-making metals, affecting the roe's delicate flavors.
